We have been testing this machine in our showroom for sometime now. It truely is a work of art, both in Aesthetics and Technology. The Scales / Gravimetric technology gives the operator a much higher level of consistency and control over the brewing recipes.

The VA388 Black Eagle Gravitech is the espresso machine for all those who dedicate their lives to coffee; who study, research and experiment every day to transfer a real coffee experience to the cup. This is the espresso machine for specialty barista.

BREW RATIO

The brew ratio is the relationship between the weight of ground coffee and the liquid in the cup.

There is no ideal brew ratio. As it varies for each coffee and depends on the baristas goal. Today gravimetric technology in the VA388 Black Eagle means espresso can consistently be made with the same brew ratio.

HOW IT WORKS

  1. Baristas can set the weight of ground coffee and liquid in the cup for each blend.
  2. Gravimetric technology in the VA388 weighs the cup and volume of extracted liquid.
  3. Software manages the entire coffee brewing process with maximum precision and barista can see the principal parameters on the group head display.

GRAVITECH. The solution to obtain a perfect brew ratio

We did not want to offer a technology to “explore”, but a system that can instantly solve the problems of a coffee shop. Gravimetric technology is just that: it guarantees a perfect espresso coffee made with maximum precision by ensuring total control at all stages of extraction. The barista just has to set the weight of the liquid in the cup for each blend. Simple, right?
Today, gravimetric technology installed on the professional VA388 coffee machine means that each espresso coffee can be made with the same ratio, ensuring a consistent brew.

With gravimetric technology, the weight of the liquid extracted is measured directly in the cup. The data is therefore much more precise and, more importantly, is not affected by other factors, such as the shape of the filter, the tamping force on the coffee, the condition of the showerheads and more. The barista always has full control of each delivery, the quantity in the cup is always programmed and any difference between one delivery and the next is eliminated.

WHY GRAVITECH?

In the last six months before the official launch of Gravitech four baristas tested this technology in their coffee shop world wide. Here the presentation: Colin Harmon (3fe – Dublin, Ireland), Miki Suzuki (Maruyama Coffee – Tokyo, Japan), Oskar Garberg (Johan&Nistrom – Stockholm, Sweden) and Ross Brown (Browns of Brockley – London, United Kingdom). They worked with the VA388 BE Gravitech and in these videos we show you field test results.

High technology for espresso coffee extraction

Solid, precise and gravimetric. The new VA388 Black Eagle Gravitech is much more than an espresso machine; it is an enhancement of each coffee blend and an expression of every barista.

Total control of the brewing phase

Gravitech gives users a higher level of consistency and control over coffee brewing with maximum precision. Baristas can set the weight of ground coffee and liquid in the cup for each blend. The group display shows the brewing time.

VA388 Black Eagle, the beginnings

A machine for consistent, sustainable and quality espresso. This was the result we wanted to get with the new product that we developed together with James Hoffmann. Yes, it was an ambitious project, but our intention was, and remains, to make the barista’s business the best. Thus our VA388 Black Eagle gravitech machine was created, an espresso machine with the capacity to control the amount of liquid in the cup, getting the right consistency of espresso and ensuring maximum aroma in the cup. Not only that; the VA388 is a tool that allows a barista to do what they want, whenever they want.
The new professional coffee machine must also support the relationship between the customer and the barista. Viglino, the designer, chose a soft style, with more curves and asymmetrical elements, in a 49 centimeter-high product.
